This sushi bowl made with teriyaki chicken is one of my family's all-time favourite meals. We serve it family style, so everyone can make their own sushi bowl just how they like it.

Ingredients you will need
To make my family's favourite build your own dinner, sushi bowl you will need:
- Diced chicken
- Oil
- Sushi rice
- Edamame beans
- Teriyaki sauce
- Coleslaw
- Toasted seaweed
- Sliced vegetables (capsicum, carrot, cucumber, avocado)
- Sesame seeds
- Kewpie mayonnaise
- Pickled ginger
- Soy Sauce
Ingredient Notes and Substitutes
- Diced Chicken: I've made this recipe with firm tofu and it works great
- Edamame beans: I buy these from the freezer section in the supermarket
- Teriyaki sauce: Use your favourite or you could use my Gluten Free Teriyaki Sauce Recipe
- Coleslaw: I often grab a bagged Japanese slaw when I'm making a sushi bowl.
- Toasted seaweed: Nori sheets or seaweed snack packs are fine

How to make a sushi bowl with Teriyaki Chicken

Prep:
- Heat your oven to 200 degrees Celsius (400 F)
- Prepare your sushi rice as per the ingredients on the pack.
- Vegetables: Slice and or grate your vegetables: Capsicum, Cucumbers, Carrots, Avocado
- Toasted Seaweed: (Nori) Tear into pieces
Coleslaw: Make your coleslaw - Edamame beans: Steam your edamame beans as per the instructions on the pack
Teriyaki Chicken
Step one: Spread the diced chicken breast on a lined baking tray (with a lip), add the oil and move the chicken around until all the pieces are oiled. Bake in your hot oven for 15 minutes.
Step two: Remove the chicken from the oven, and stir through the teriyaki sauce until the chicken is well coated.
Build your sushi bowl
Step three: Start with rice and/or coleslaw in the bottom of your bowl.
Top with your favourite vegetables
Step four: Top with your favourite vegetables and toasted seaweed pieces
Step five: Add the teriyaki chicken
Step six: Add your favourite condiments: Japanese mayonnaise, extra teriyaki sauce, pickled ginger, wasabi, sesame seeds, soy sauce
