Chocolate Chia Apricot Balls

These no-bake apricot balls are so delicious and quick to make, perfect to keep on hand for kid snacking moments (oh and adult snacking too!)

  • Only equipment needed is a bowl and spoon
  • Full of good stuff (apricots, oats, nut butter, chia seeds) and some chocolate because apricot and chocolate is a match made in heaven.

Ingredients you will need

To may my chocolate chia apricot balls, you will need dried apricots, chia seeds, chocolate chips, rolled oats, maple syrup, and your favourite nut butter.

Ingredient Notes and Substitutes

  • Chia Seeds: These can be left out, however, the apricot balls will not hold together quite as well as the gelling tendency of chia seeds is why they are in the recipe.
  • Rolled oats: I use traditional rolled oats, but quick cook oats will be fine.
  • Nut butter: My favourite nut butter to use for this recipe are cashew or almond, but these can get a bit pricey, so I often use peanut butter as well, the flavour isn't quite as amazing with peanut butter but still fine.
  • Maple syrup: This can be substituted for honey
  • Apricots: If you substitute the dried apricots they won't be apricot balls any more lol, but other dried fruits are delicious in this recipe especially cranberries.

Step by step instructions

Step one: Place all ingredients in a bowl and mix

Oats, dried apricots, chia seeds, chcocoalte chips and nut butter in a mixing bowl.

Step two: Set the mix aside for 20 mins, this allows the chia seeds to gel a little and will mean the mix is easier to roll into balls

Step three: Take spoonfuls and roll into balls

Refrigerate

Here is how you can make this apricot ball recipe perfectly every time!

My only tip is to wait 20 minutes after you've mixed the ingredients together before rolling the balls. Otherwise there isn't much to this recipe.

Yes, this apricot ball recipe freezes well, freeze the balls in an airtight container for up to 3 months.

Ingredients

  • 80 g chopped dried apricots ½ cup
  • 90 g dark chocolate chips ½cup
  • 100 g rolled oats 1 cup
  • 35 g chia seeds 3 tablespoons
  • 45 ml maple syrup 3 tablespoons
  • 180 g nut butter ¾ cup (almond, peanut, cashew)
