Mini Egg Cookies
These mini egg cookies are such a fun baking project for easer. A soft vanilla cookie makes a wee nest to hold the mini eggs.

Ingredients you will need
To make my mini egg cookies you will of course need mini easter eggs plus these pantry and fridge basics:
- butter
- egg
- icing sugar
- flour
- baking powder
- vanilla essence
Ingredient Notes and Substitutes
- Icing sugar: In some parts of the world this is called confectioners sugar.
- Egg: This vanilla cookie recipe works well egg-free with 3 Tablepoons of condensed milk as a substitute for the egg
- Butter: This cookie will work with a vegan butter or a full fat margarine such as nutalex.
- Mini eggs: Candy coated mini eggs are available at Easter time, Cadbury do them and you can also find bags of M and M speckled eggs.
Step by step instructions
Below are illustrated step-by-step instructions to make my mini egg cookie recipe, if you prefer just the written instructions then head straight to the printable recipe card below.
Prep: Preheat your oven to 180 degrees Celsius (160 degrees fan-forced).
Step one: In a medium/large mixing bowl cream the softened butter, icing sugar, vanilla essence, and egg.
Step two: Add the flour and baking powder, combine to form a soft cookie dough, you can either use a beater or wooden spoon for this stage.
Step three: Use a cookie scoop or large spoon to make golf ball-sized portions of dough (you will end up with approximately 12 cookies. Roll into balls and put on a lined baking tray/cookie sheet.
Step four: Gently flatten the dough balls, I do this by placing a small piece of baking paper on top and gently pressing down on each cookie with a flat bottomed measuring cup, you can use your hand.
Step five: Make an indent in the centre of each cookie, this will make the cookies like a nest to hold mini eggs. I do this by pressing the round base of an egg into the centre of each cookie.
Step six: Add 3 mini eggs into the center of each cookie.
Bake for at 180 degrees celsius 6 minutes, you don't want these cookies to be too golden. The cookies will be soft when you remove them from the oven but they will become more firm as they cool.

- Another tip.. just decorate them with the kids, still lot's of fun but with perhaps less pressure especially if your kids are still young.
- Candy coated mini eggs are available at Easter time, Cadbury do them and you can also find bags of M and M speckled eggs. Another option is to use sugar coated almonds rather than mini eggs.

They are fine the baking time is short and they are candy coated.
As you can see in the images my eggs aren't melted.
You could add them after baking if you wish
