Pizza Scrolls - Puff Pastry

These pizza scrolls are a great change-up for those days when you are just over lunchbox packing and can't face making yet another sandwich. Tasty and easy to make I'll share my tips and tricks for these awesome make-ahead pizza pinwheels.

Ingredients you will need

When it comes to pizza scrolls you really can let your imagination run wild, you can use leftovers and you can keep it simple by using convenience products from your fridge, freezer and pantry.

I've teamed up with Countdown to share 3 Pizza Scroll recipes all using puff pastry sheets as a base and some of my favourite affordable and convenient products from their range. Because keeping things easy is just my style.

  1. Pizza Pinwheel: Pizza sauce, chopped spinach, grated carrot, diced onions, bacon, grated cheese.
  2. Spinach and Feta Scrolls: Cottage cheese, feta, chopped spinach, diced onions (optional).
  3. Chicken Alfredo Pizza Scrolls: Sour cream, parmesan cheese, cooked shredded chicken, spinach, mushrooms, diced onion (optional), bacon (optional)

Ingredient Notes and Substitutes

  • Puff pastry: If you would prefer not to use puff pastry, check out my wholemeal yoghurt dough recipe.
  • Chopped Spinach: This can be substituted for any grated vegetable, zucchini/courgette or broccoli stalk work really well.
  • Pizza Sauce: A good alternative to pizza sauce is tinned tomatoes blended with spinach, you can learn how to make a quick pizza base suace here.


How to make puff pastry pizza scrolls

Below are illustrated step-by-step instructions to make my pizza scrolls, if you prefer just the written instructions or want to watch a video then head straight to the printable recipe card or recipe video below.

Pizza Pinwheel

Step one: Lay a puff pastry sheet and 2 portions of frozen chopped spinach on your bench and allow to defrost. Preheat your oven to 200 degrees celsius.

Step two: Spread the puff pastry with pizza sauce. You want to spread the topping over three-quarters of the puff pastry sheet, leaving one-quarter free from toppings.

Step three: Sprinkle chopped spinach, grated carrot, and diced onion over the pizza sauce.

Step four: Add a rasher of bacon and sprinkle on grated cheese.

Step five: Brush the pastry that has no toppings with a little milk. You can use a pastry brush, but honestly, you can also just dip your fingers in a little milk and rub it on.

Step six: Roll up the pizza pinwheel towards the milk-brushed end of the pastry. Slice into 6 even-sized pieces and place on a baking paper-lined baking tray. Bake for 20-25 minutes until golden brown.

Spinach and Feta Scrolls

Please follow the same steps for making the pizza pinwheels. For these scrolls you will combine cottage cheese, feta, chopped spinach, chopped onion (optional) and spread this over the pastry sheet.

Chicken Alfredo Pizza Scrolls

Please follow the same steps for making the pizza pinwheels. For these pinwheels you will combine sour cream and parmesan, this is the base sauce.

Top this with sliced mushrooms, baby spinach leaves, shredded cooked chicken, diced onions (optional) and grated cheese.

Top Tips

Here is how you can make these puff pastry pizza scrolls perfectly every time!

  • Be sure to preheat your oven, you want these puff pastry scrolls to go into a hot oven!
  • Try different toppings, anything goes, even good old ham, cheese and pineapple
  • Enjoy these scrolls either hot or cold. If you are going to refrigerate them , be sure to allow them to cool completely before placing in an airtight container in the fridge.

  • 1 small carrot (grated)
  • 1 rasher streaky bacon
  • 30 g cheese (grated)
