Lay a puff pastry sheet and 2 portions of frozen chopped spinach on your bench and allow to defrost. Preheat your oven to 200 degrees celsius.
Spread the puff pastry with pizza sauce. You want to spread the topping over three-quarters of the puff pastry sheet, leaving one-quarter free from toppings.
Sprinkle chopped spinach, grated carrot, and diced onion over the pizza sauce.
Add a rasher of bacon and sprinkle on grated cheese.
Brush the pastry that has no toppings with a little milk. You can use a pastry brush, but honestly, you can also just dip your fingers in a little milk and rub it on.
Roll up the pizza pinwheel towards the milk-brushed end of the pastry.
Slice into 6 even-sized pieces and place on a baking paper-lined baking tray.
Bake for 20-25 minutes until golden brown.

Tips

Enjoy these scrolls either hot or cold. If you are going to refrigerate them, be sure to allow them to cool completely before placing in an airtight container in the fridge.
