Bircher muesli is one of my favourite make ahead breakfasts, creamy, sweet and full of all sorts of goodness.

Ingredients you will need

To make my Bircher Muesli you will need:

  • Plain greek style yoghurt
  • Apple juice
  • Lemon juice
  • Cinnamon
  • Maple syrup
  • Apples
  • Rolled oats
  • Dates or raisins
  • Sunflower seeds
  • Chia seeds

Ingredients Notes & Substitutions

The combination of ingredients in my recipe is how I like to make my bircher muesli, but most can be substituted if you would prefer to, Although of course, any changes will change the flavour profile.

  • Plain yoghurt: This can be substituted for a dairy-free yogurt such as coconut yogurt.
  • Apple juice
  • Lemon juice: A little lemon juice really makes all the other flavours sing.
  • Cinnamon
  • Maple syrup
  • Apples
  • Rolled oats: Traditional rolled oats or quick-cooked oats can be used. Steel-cut oats will not work in this recipe.
  • Dates or raisins: This can be substituted for your chopped dried fruit such as apricots or cranberries
  • Sunflower seeds: These can be substituted for pumpkin seeds or chopped nuts such as almonds.
  • Chia seeds: These can be substituted for linseed or flaxseed.

Step-by-step instructions

Below are illustrated step-by-step instructions to make my Bircher Muesli recipe, if you prefer just the written instructions then head straight to the printable recipe card below.

Step one: In a large bowl whisk together the yoghurt, apple juice, milk lemon juice, cinnamon and maple syrup.

Step two: Core and grate the apples. Leave the skin on.

Step three: Stir the rolled oats, sunflower seeds, grated apples, dates, sunflower seeds and chia seeds into the wet ingredients.

Top Tips

Here is how you can make these bircher muesli perfectly every time!

  • Give it time! It's good after one night in the fridge but even better after a few days.
  • The quantity of yogurt can be adjusted based on your preference, I like my bircher muesli to be quite thick, if you like it runnier add another ยฝ cup of yoghurt.
  • Enjoy your bircher muesli straight from the fridge or top with extra fresh fruit, yoghurt, nuts and seeds and maybe a drizzle of honey or maple syrup.

Bircher muesli is a traditional recipe for overnight oatmeal where rolled oats, nuts, seeds and dried fruits are soaked in a combination of juice and yogurt with grated apple.

What is the difference between bircher muesli and overnight oatmeal?

Bircher muesli is the original overnight oatmeal recipe developed by a Swiss Doctor. There are now many versions of overnight oats where rolled oats are soaked in milk, yoghurts or juices overnight.

How long will bircher muesli store in the fridge?

As long as all the ingredients used are within date then bircher muesli will store for up to seven days in an airtight container in the fridge.

Ingredients

  • 1 cup plain greek style yoghurt 260 grams
  • 1 cup apple juice
  • 1 Tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 2 Tablepsoon maple syrup
  • 2 apples cored and grated

Instructions
