These zucchini tots are a simple vegetable-based recipe that is perfect as a snack, lunch boxes and for baby-led weaning.

Ingredients you will need

To make my baked zucchini tots you will need:

  • zucchini 
  • chives
  • onion powder
  • plain flour
  • grated cheese
  • eggs

Ingredient Notes and Substitutes

  • Plain flour: this recipe will work with gluten-free flour or rice flour.
  • Chives: These could be substituted for grated onion or finely sliced spring onions
  • I use grated cheddar cheese or grated colby cheese.


Step-by-step instructions

Prep: Preheat your oven to 200 degrees Celsius, 400F

Grate the zucchini, and squeeze it between your hands to get rid of as much liquid as possible.

Step one: Place 100 grams of the squeezed zucchini with the remaining ingredients in a large mixing bowl. Combine with a wooden spoon.

Step two: Line a tray with baking paper. Place tablespoon scoops of the zucchini tot batter on the lined tray.

Step three: Bake at 200 degrees celsius for 15 minutes, or until the zucchini tots are golden

  • Take the time to squeeze out the grated zucchini, the dryer the zucchini the better the final zucchini tot!
  • The number of eggs required for this recipe may vary between 1-2 depending on the size of the eggs and how dry the grated zucchini is. You can always make the batter with one egg, then add a second if the batter is not coming together.
  • I do not add salt to this recipe when making it for baby-led weaning, you can season the batter with salt and pepper for older family members.

Ingredients

  • 1-2 medium zucchini 100 grams grated zucchini once squeezed
  • 1 Tablespoon chives
  • 1 teaspoon onion powder
  • ½ cup flour 75 grams
  • ½ cup grated cheese
  • 2 eggs 1-2 eggs

Instructions

  • Preheat your oven to 200 degrees celsius
