You know those nights when you wish you had made the call to put some chocolate in the shopping trolley, but you haven't.. and you REGRET IT!

This is when this vegan brownie in a mug recipe steps up to the plate and knocks out a home run meeting that emergency chocolate need!

Why a Vegan Brownie in a Mug?

I am not vegan, but I do think a little bit more plant-based food is good for everyone's health.  Let's be honest though, when you are looking for a mug brownie recipe on google you probably aren't looking for something healthy. You are looking for something CHOCOLATEY! 

The main reason I have gone for a vegan brownie in a mug recipe is because a vegan recipe will be egg and dairy-free.

When pregnant, many women have chocolate cravings, and many of us want something gooey and chocolatey. A lot of pregnant women may be avoiding uncooked or soft-cooked eggs.

So I wanted to create a batter for this mug cake that didn't need eggs and therefore would pose no food safety risk to pregnant women if they decided to not cook the batter fully, and let the center of their brownie in a mug be gooey (The guidelines regarding uncooked eggs in pregnancy vary from country to country, so yes I know not all pregnant women are avoiding uncooked eggs, but some are)

Ok, so truth be told I've called this a Vegan Mug Brownie Recipe as I really wanted to take part in a little collaboration with a group of Kiwi Recipe Bloggers and the theme was Brownie.

  A traditional Brownie recipe doesn't kind of fit with the theme of my blog, ie Mainly Healthy Recipes For Kids. But guess who is looking for mainly healthy recipes for kids.. Mums, and guess who sometimes need an emergency chocolate hit before they tackle folding the laundry, mums!

So I thought let's create a no-fail easy recipe that will make a quick chocolate hit for mums like me!

A quick google has informed me that a brownie is usually a rectangular baked chocolate cake that is either fudgy or cakey in texture.

Well as this recipe is made in a mug, it's not rectangular, but it is definitely fudgy. So I think it could be called either; A Vegan Brownie in a Mug, or a Vegan Mug Cake.

Simple & Flexible Vegan Brownie in a Mug

This recipe calls for only 5 ingredients, 6 if you count water, but I think we can all agree I don't need to count that!

  • Plain Flour
  • Cocoa
  • Baking powder
  • Maple Syrup
  • Peanut butter
  • Water
  • Optional dark choc drops

The ingredients you need

I used Countdown 100% pure Canadian Maple Syrup, Essentials Plain Flour and  Countdown Cocoa Powder in this recipe, these were all gifted by Countdown NZ

The beauty of a mug cake for one is that the mug holds the brownie together, you don't need to take it out of the mug and slice it, which means the structural integrity of the mug brownie is not important!

All it needs to do is taste good, and be able to be spooned from the mug straight into your mouth.

This means that the recipe is also really flexible in that you can substitute many ingredients and still end up with something delicious.

 Vegan Mug Brownie Substitutions

  • FLOUR:  If you need this recipe to be gluten free just sub for gluten-free flour
  • MAPLE SYRUP: No maple syrup, no problem, substitute for another liquid sweetener such as date syrup or honey (note recipe will not be vegan if honey is used) or any granulated sugar also works. If using granulated sugar you may need am extra splash of water
  • PEANUT BUTTER: This can be substituted for any nut butter, or a mild tasting oil like coconut oil also works. 
  • Or you may prefer a vanilla mug cake

An easy vegan chocolate mug cake recipe, 5 ingredients to make a fudgy brownie in a mug

Ingredients

  • ¼ cup plain flour
  • 2 tablespoon unsweetened cocoa powder
  • ½ teaspoon baking powder
  • 2 tablespoon maple syrup
  • 1 tablespoon Peanut Butter
  • ¼ Cup water
  • Optional Dark Chocolate Drops

Instructions

  1. If you are a visual learner you may want to check out the quick recipe video for this recipe before starting out.
  2. In a bowl place dry ingredients (flour, cocoa, baking powder, and whisk together
  3. Add wet ingredients (maple syrup, peanut butter, water) whisk. You want the batter to be quite loose, check out the video to see the texture. You may need to add a little extra water depending on the nut butter you have used or any ingredient substitutions you have made
  4. Put into a large mug (at this stage you can choose to add dark chocolate drops, I add some into the middle and a few on the top to make it that little bit more indulgent
  5. Prepare the microwave, either pop a paper towel down in the microwave or a small plate for you to sit the mug on, just in case there is any overflow--- I haven't had any overflow, but I do use a nice large mug
  6. Microwave for 40 seconds to start. In my microwave (a 1100w microwave) this is perfect and still a bit gooey, you may need a little more or less so test it. Remember with a microwave recipe it often cooks a little more on sitting, so it's best to start with a shorter time frame
  7. Serve with a dollop of creaminess, ie ice cream, vegan nice cream, yogurt, coconut yogurt, whichever tickles your fancy
