The perfect fun party treat! These honey joys are what child hood memories are made of, sweet, crunchy and easy to make.

Ingredient Notes and Substitutes

  • Butter: This can be substituted for coconut oil (Dairy Free).
  • Honey: This can be substituted for maple syrup (Vegan).
  • Cornflakes: Choose gluten free cornflakes if you need this honey joy recipe to be gluten free.
  • Vanilla extract: This can be left out, but I find the taste is better if you include it.


Honey Joys Step-by-Step

Below are illustrated step-by-step instructions to make my Honey Joy recipe, if you prefer just the written instructions then head straight to the printable recipe card or video below.

Step one: Preheat your oven to 150 degrees Celsius. 

Start by lining a muffin tin with cupcake liners. (I have used reusable silicone liner but you can also use paper cases).

Step two: Melt the honey, butter and sugar in a saucepan over a medium heat

Step three: Let the mixture come to the boil, you will want to boil it for about 3 minutes or until it becomes foamy or frothy.

Step four: Remove from the heat and stir through the vanilla, it will bubble a bit when you do this.

Step five: Add the cornflakes and stir until well combined,

Step six: Working carefully but quickly, scoop the honey joy mixture into the cupcake liners. I use a cookie scoop for this, but a spoon works just as well.

Step seven: Bake in your oven for 15 minutes.

Ingredients

  • 125 g butter
  • ยผ cup sugar 55 grams
  • 3 tablespoon honey 60 grams

  • 5 cups corn flakes 250 grams
