My family love a lasagne for dinner, we love lasagna roll ups and we even love my Mexican Lasagna, but some days (especially at the end of the week) I just don't have the energy to prep a lasagne from scratch.

Ingredient Notes and Substitutes

  • Pasta Sauce: Use your favourite store bought spaghetti sauce or marinara sauce.
  • Ravioli: Choose store bought fresh filled pastas, they do not need to be ravioli, tortellini also works well. Choose your favourite flavour. I used a spinach an cheese ravioli. I have made this recipe successfully with gluten free ravioli. You can also use frozen ravioli.
  • Cheese: I like to use a mix of parmesan cheese for its flavour and mozzarella for its melting ability but you can use any grated cheese. I have used a tasty cheddar (sharp cheddar) and Colby cheese successfully.
