Strawberry Pancakes

We love pancakes in our house, these strawberry pancakes are based on an easy fluffy vanilla pancake recipe made from everyday ingredients but with delicious pops of fresh strawberry in every bite!

Why This Recipe Works

  • You only need pantry basics to make this recipe, nothing fancy or flash here

Ingredients you will need

Just like I said, you only need pantry basics (flour, baking powder, egg, milk, vanilla essence, a little sugar, and salt) to make these strawberry pancakes, oh, and of course you are also going to need strawberries!

Step by step instructions

Make the batter

  • Whisk together the dry ingredients. (photo 1)
  • Melt the butter, (I do this in a microwave-proof jug, that's large enough to hold all the wet ingredients, which means fewer dishes!)
  • Whisk together the wet ingredients (melted butter, egg, vanilla, milk). (photo 2)
  • Add the wet ingredients to the dry ingredients, whisk them until well combined. (photos 5,6). There may be a few lumps, don't worry about these.
  • Leave the batter to rest for 10 mins
  • While the batter is resting, dice the strawberries into 1cm cubes (make sure you remove the leaves lol.) (photo 7).
  • Fold the diced strawberries into the pancake batter. (photo 8).

Cook the strawberry pancakes

  • Heat a pan to medium heat, make sure it has a nice flat base, this is crucial for making great pancakes.
  • Add a little butter or oil to the surface of the pan, I actually do this with a pastry brush, so that the pan has a nice thin covering of the butter or oil.
  • Scoop one-quarter cup of the batter and pour it onto the heated pan. Your pancake won't be perfectly round, the lumps of strawberry means you will get imperfect circles, but they will still taste great! (photo 1). I find you can fit around 4 pancakes into a pan, but obviously, that will depend on the size of your pan
  • Watch for small bubbles to appear on the surface of the pancake and burst, when you see them, it's time to flip the pancake (photos 2-3).
  • The second side of the pancake won't take long to cook, if you watch the edges of the pancake you will be able to see bubbles appearing and you will be able to see when the centre of the pancake is cooked

Top Tips

Here is how you can make these fluffy strawberry pancakes perfectly every time!

  • Make sure your baking powder hasn't expired. Baking powder definitely has a shelf life, if your pancakes aren't light and fluffy it may be that your baking powder needs to be replaced
  • Don't skip the resting time for the batter, your pancakes will be better and fluffier for it.
  • This pancake recipe will work just fine with other flavours, try subbing the pieces of strawberry for other diced fruit.


FAQs

Do I need to rest my pancake better?

Yes, if you want a light fluffy pancake then you should definitely rest your pancake batter for at least 1o minutes before cooking. This allows the gluten in the flour to relax which means softer fluffier pancakes.

Can I make these pancakes dairy free

Yes I have tested this recipe without dairy. The butter can be substituted for a mild flavoured oil, and the milk can be substituted for a non-dairy alternative such as soy milk, nut milk or rice milk.

Ingredients

  • 1.5 cup plain flour 225g
  • 1 tablespoon sugar 16g or 3 teaspoons
  • 1 tablespoon baking powder 12g or 3 teaspoons
  • 1 pinch salt I find around one quater to half a teaspoon is a good amount
  • 3 tablespoon butter 45g
  • 1.25 cup milk 310g
  • 2 teaspoon vanilla essence
  • 1 egg
  • 1 cup strawberries 125g or half a punnet
