Ten Minute Tomato Soup

I call this easy tomato soup my ten minute soup. It's easy to make, tastes delicious and even my kids like it.

Ingredients you will need

To make my easy tomato soup you will need canned tomatoes (I prefer diced tomatoes) onion, garlic, celery and carrot, and you will need around 1 litre of your preferred stock or bone broth. I like to add some bacon to my recipe and a good sprinkling of dried herbs for flavour. Oh and olive oil, this recipe is all the better with a good glug of olive oil!

Substitutes & Ingredient Notes

  • Broth/stock: I use a chicken bone broth when I make this tomato soup recipe. You can use your preferred stock or broth though.
  • Bacon: You could skip the bacon if you would like your soup to be vegetarian. I do like the flavour the bacon brings, and it does help win my kids over when it comes to having soup for dinner.
  • Garlic/onion/celery/carrot: If you don't have all four on hand, do not worry, I just use a mix of whatever I have. sometimes just carrot and onion, sometimes just onion, it won't matter too much, although having all four is great.
  • Dried herbs: I tend to just use a dried 'Italian Herb Mix' oregano, basil, mixed herbs, all taste fine.

Step by step instructions

Below are illustrated step-by-step instructions to make my easy tomato soup, if you prefer just the written instructions then head straight to the printable recipe card below.

Step one: Finely dice the onion, celery, carrot, and garlic. I do this in my food processor (it takes around 30 seconds). I just throw it all in and blitz,

Step two: Dice the bacon

Step three: Heat the olive oil In a large saucepan over a medium high heat. Add the bacon and diced vegetables. Sauté until fragrant and bacon cooked, this takes around 3 minutes.

Step four: Add the tinned tomatoes, stock/broth, and herbs. Simmer for at least 7 minutes or as long as you want. (It is better if you simmer longer, but it's no drama if you don't. I call this my 10-minute soup, as it's all in the pot in under 10 minutes, the simmering I don't need to really be involved in, so sometimes I will leave it bubbling for an hour which admittedly gives a better flavoured soup.

Top Tips

Here is how you can make this easy tomato soup recipe perfectly every time!

  • Don't skimp on the olive oil. Now I know like it will seem like A LOT, but trust me, a soup like this is extra delicious with a good amount of olive oil. Fat carries the flavour in food, so it will really make all the difference.
  • Dipping bread into the soup will really help your kids get into it, don't panic if to start it seems like they are only eating the bread, over time they will get better and better at enjoying soup.
  • Cheese toasted sandwiches are so good dunked in this easy tomato soup.
  • Leftovers... try stirring it through warm pasta, with a some handfuls of baby spinach leaves, top with a little parmesan and you have a second family mea, or use it to make my creamy tomato pasta recipe!

A really easy tomato soup recipe that my family loves. With minimal prep it's all ready to simmer in the pot in under 10 minutes and in 30-60 minutes is perfect to serve as a family meal.
