Strawberry Popsicles

These homemade strawberry popsicles are a delicious cool-down treat. Full of real fruit and strawberry flavour they are sure to be a summertime hit!

Ingredients you will need

  • strawberries
  • strawberry puree
  • elderflower cordial (optional)

Ingredient Notes and Substitutes

  • Strawberries: This recipe will work with either fresh strawberries or frozen strawberries. You can also use other berries: raspberries, blueberries, blackberries or boysenberries.
  • Strawberry puree: I like to add homemade strawberry puree to my popsicles as it adds a richness of flavour and gives the ice blocks a better texture. You could always use strayberry jam as an alternative.
  • Elderflower cordial: The elderflower cordial adds lovely floral flavors to the popsicle but it is not essential. The elderflower cordial can be substituted for honey, water or you can double the quantity of strawberry puree used.

Step one: Place the strawberries, strawberry puree and cordial in a blender or food processor. Pulse until combined leaving some small chunks of strawberry (I like the strawberries to have a little bit of texture.

Step two: Pour the mixture into popsicle molds add popsicle sticks and freeze until solid.

Top Tips

Here is how you can make these homemade popsicles perfectly every time!

  • Store your pops in their molds in the freezer for up to one month
  • If you would like an ice block with a creamy texture you can add greek yogurt or your favourite flavored yogurt.
  • A hack (that I didn't use when making these ice blocks) but does change the texture of the ice blocks and reduces the formation of ice crystals is to add 1-2 teaspoons of corn flour (corn starch) to the mix.

How do you make popsicles without molds?

If you do not have popsicle molds you can freeze popsicles in paper cups.

How do you make popsicles not icy?

Blending a little corn starch into the mixture be will reduce the amount of ice crystals forming in your popsicle.
