Fruit Pizza For Easter

Ingredients you will need

To make my Fruit Pizza you will start with a sugar cookie base for this you will need pantry basics:

Sugar cookie base

  • butter
  • caster sugar 
  • egg
  • vanilla extract
  • lemon juice
  • baking powder
  • plain flour

Cream cheese frosting

  • cream cheese
  • maple syrup
  • lemon juice and lemon zest

Fruit decorations

  • apple
  • kiwifruit
  • mandarins
  • banana
  • blueberries
  • raspberries
  • blackberries

Ingredient Notes and Substitutes

  • Butter: This sugar cookie base will work with a full-fat margarine or softened coconut oil
  • Plain flour: I have a gluten-free sugar cookie recipe on my website that you could use for the pizza base
  • Caster sugar: This recipe will work with regular white sugar.. although I find you get a better texture with caster sugar.
  • Maple syrup: You can use honey or icing sugar or stevia as an alternative to maple syrup
  • Fruit: You can use any seasonal fresh fruit, canned or frozen fruit will also work well

Step-by-step instructions

Below are illustrated step-by-step instructions to make my Fruit Pizza Recipe, if you prefer just the written instructions then head straight to the printable recipe card below.

Prep:

  • Heat your oven to 160 degrees celsius.
  • Take your cream cheese out of the fridge so it can soften and come to room temperature

Step one: Cream the butter and sugar until as white as possible.

Step two: Add vanilla, lemon juice and egg, beat.

Step three: In a separate bowl whisk the flour and baking powder so that it is well combined

Step four: Add half the flour to the creamed ingredients, mix on low speed until combined, add the second half of the flour and mix on low speed until combined. Cover the dough in the mixing bowl with cling wrap or beeswax paper/wrap, chill for 30 mins.

Step five: Place a ball of dough between 2 sheets of baking powder, or on a floured board. Roll the dough to approximately 6mm thick. I find that half of the dough makes a great sized pizza base.

Step six: Shape the cookie base into an egg shape with your hands.

Bake your sugar cookie pizza base at 160 degrees celsis for 15 minutes, it should be lightly golden on the underside and edges when it is ready.

Cream cheese frosting

  • Use a stand beater or electric beater to beat your cream cheese until it is soft and lump free
  • Add the maple syrup, lemon juice and zest, beat until well combined
  • Spread the frosting over your cooled pizza base.

Ingredients

Sugar Cookie Base

  • 225 g butter
  • 225 g caster sugar 1 cup
  • 1 egg
  • 2 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder
  • 450 g flour 3 cups

Cream Cheese Frosting

  • 225 grams cream cheese
  • ยผ cup maple syrup 60 mls
  • 1 Tablespoon lemon juice
  • 1 Tablespoon lemon zest (zest from 1 lemon)

Fresh Fruit Decorations

  • 1 apple
  • 2 kiwifruit
  • 1 banana
  • ยฝ cup blueberries
  • ยฝ cup raspberries
  • ยฝ cup blackberries

Notes

Tips

  • If you are having any issues rolling out the dough or moving the cut cookies, it may mean your dough has become too warm, chill it in the fridge and it will be easier to deal with.
  • The lemon juice in the recipe doesn't add flavour to the cookies, but the acid helps stop the cookies from spreading while baking.
  • Store your sugar cookies in an air-tight container in your pantry for up to 7 days, or freeze the cookies for up to 6 months.
  • If you have unbaked sugar cookie dough it will last up to 7 days in the refrigerator, or it can be frozen for up to 6 months.
