Chocolate Chip Mini Muffins

A simple recipe for a batch of chocolate chip mini muffins. These bite-size muffins are perfect for lunchboxes, snacks and parties.

Ingredients you will need

To make my chocolate chip mini muffin recipe you will need:

  • plain flour
  • baking powder
  • sugar
  • chocolate chips
  • butter
  • egg
  • milk
  • teaspoon vanilla extract

Ingredient Notes and Substitutes

  • Butter: This can be substituted for a mild flavoured oil.
  • Milk: This can be substituted for any milk alternative, (salmon milk, oat milk, rice milk, soy milk)
  • Chocolate chips: Be sure to choose small chocolate chips and not the larger chocolate drops or chunks, they are too large for mini muffins. You can also leave the chocolate chips out and you will still have a lovely vanilla muffin.

Step by step instructions

Below are illustrated step-by-step instructions to make my Mini Muffin Recipe, if you prefer just the written instructions then head straight to the printable recipe card below.

Prep: Preheat your oven to 180 degrees celsius. (360 Fahrenheit)

Step one: Sift the flour, baking powder and sugar into a mixing bowl. (If you don't have a sifter or sieve you can use a whisk or fork to make sure the dry ingredients are well combined and lump-free.)

Step two: Add the chocolate chips to the dry ingredients and mix so they are evenly distributed.

Step three: Melt the butter, add the egg, vanilla and milk to the butter and combine (whisk together).

Step four: Fold the wet ingredients into the dry ingredients to make your mini muffin batter. Be careful to not overmix the batter.

Step five: Spoon your muffin batter into a mini muffin tray. I grease the tray if I'm using traditional bakeware, but they are usually ok not greased in a silicone muffin tray.

Step six: Bake for 10-12 minutes until lightly golden and the centre of the muffin springs back when pressed gently.

Top Tips

Here is how you can make these chocolate chip mini muffins perfectly every time!

  • Don't over-mix the muffin batter
  • Use a small chocolate chip
  • Don't overbake- remove them from the oven as soon as they are lightly golden brown, as the muffins are so small they can overcook and become dry quite easily.

Ingredients

  • 120 grams plain flour 1 cup
  • 2 teaspoons baking powder
  • 50 grams sugar ¼ cup
  • 40 grams chocolate chips ¼ cup
  • 50 grams butter
  • 1 egg
  • 180 mililitres milk ¾ cup
  • 1 teaspoon vanilla essence
