Why This Recipe Works

Ingredients you will need
To make my creamy roasted mushrooms you will need button mushrooms, olive oil, creme fraiche, and salt and pepper.
Creme Fraiche: This can be substituted with sour cream, it isn't quite as nice but, the cream sauce isn't quite as smooth, but the flavour is fine.

You do not need to peel mushrooms before roasting them. Mushroom skin is not tough and is safe to eat. Just brush visible dirt and debris from the mushrooms before roasting.
To make creamy roasted mushrooms small compact mushrooms work best, as they hold their shape. Button mushrooms, small swiss browns, cremini mushrooms or baby bellas are all good options.
