A sweet and refreshing Pineapple Cucumber Smoothie recipe that my kids love. Perfect to re-fuel after a hot summer day at school and so good for using up lunch box leftovers.

To make this pineapple cucumber smoothie you will need just 4 ingredients.
Ingredient Notes and Substitutes
- Pineapple: Choose fresh ripe pineapple, pineapple that really smells like pineapple it is usually the sweetest and has the most flavor. If pineapples are out of season you can use canned pineapple or frozen pineapple.
- Cucumber: I typically use cucumber that is either come back home from school on a trip in a lunch box, wasn't eaten at dinner or was a bit too misshapen to be pickled cucumbers.
- Apple juice: This could be substituted for another juice such as pineapple juice or you can also make this smoothie with coconut water, water or ice cubes.
- Seeds (flaxseeds, chia seeds, hemp seeds): I like to add seeds to this recipe to increase the fiber and nutrient density of the smoothie. Just like making chia seed puddings the chia seeds also thicken the smoothie a little.

Step one: There is only one step to making this smoothie. Blend until smooth. The most efficient way to do this is to start your blender at a low speed until all the ingredients are combined and the big chunks are gone, then increase to high and go crazy until smooth and creamy.

- The most important thing for this smoothie is to use the ripest sweetest pineapple available. The perfect way to use up any pineapple after you made pineapple muffins or a pineapple chicken stir fry.
- If your child is a little nervous about things that are green you can try peeling the cucumber first (I use a similar technique with zucchini in my tropical smoothie recipe). Alternatively, consider serving this smoothie in an opaque smoothie cup so they aren't able to 'taste' the smoothie with their eyes before actually tasting it!
How To Make This Cucumber Smoothie Suitable For Baby-Led-Weaning
- If you are making this recipe for a baby under one, consider using water instead of apple juice as the liquid as this will reduce the sugar content of the smoothie.
- If your child is under one year of age smoothies should not be used to substitute a 'milk feed' until this time all 'milk feeds' should either be breast milk or an appropriate infant formula. Smoothies can be offered as part of a meal or snack.
