Easter Bunny Carrot Cupcakes are a fun easter treat for kids, as well as a brilliantly simple kitchen project to get kids baking in the kitchen this Easter!
1pack store-bought vanilla cupcake mix(see notes for lower-sugar and allergy friendly alternatives)
Ingredients listed on the cupcake mix box (typically eggs, butter, milk, and water)
1cupgrated carrot
Frosting & Decorations
Use the frosting included in the cupcake mix, or make a simple cream cheese frosting (see notes for recipe link)
12baby carrots
12orange candy(jelly beans, skittles, M&Ms)
Instructions
Carrot Cupcakes
Preheat the oven according to the instructions on your cupcake mix packet.
Prepare the cupcake batter as directed on the packet.
Stir the grated carrot into the prepared batter.
Line a mini muffin tray with 24 mini cupcake liners, or a regular muffin tin with 12 cupcake liners.
Portion the batter evenly into the liners.
Bake until golden and a skewer comes out clean.
Allow cupcakes to cool completely before decorating.
Easter Bunny Decorations
Frost the cupcakes using the included frosting, or your own cream cheese frosting. A piping bag gives a neat finish, but spreading with a knife works perfectly too.
Make the bunny ears: Cut each baby carrot in half crossways, then cut each piece in half lengthways. You’ll get 4 “ear” pieces per carrot.
Decorate each cupcake with 2 carrot ears and an orange candy nose.
Notes
Orange candy: The orange candy will for your little easter bunny's nose, orange, jelly beans, skittles, M&Ms all work.
Vanilla Cupcake Mix: I have made my carrot cupcakes with both regular and gluten free cupcake mix. You can of course make your own Vanilla Cupcake batter from scratch if you prefer. If you would like a lower sugar option perfect for toddlers use my easy carrot muffins, abc muffins or apple sauce muffins as a base.
