Gluten free ice cream sandwiches filled with real fruit ice cream are an absolutely delicious dessert, a great alternative to an ice cream cone, or just a really fun way to serve ice cream.

Ingredients you will need

To make my gluten free Ice Cream sandwiches you will need your favourite gluten free cookies. I used Countdown Free From Gluten Choc Chip Biscuits, Gingernut Biscuits and White Chocolate Coconut and Lemon Biscuits. For the real fruit ice cream, I used Vanilla ice cream, frozen blueberries, frozen strawberries and frozen mango.

I decided to focus on Birthday Party Ideas, because, I believe if you can it's great to have inclusive food available at parties, options kids with coeliac disease or other food allergies can enjoy.

Step by step instructions

Making homemade real fruit ice cream is incredibly easy. All you need to do is blitz equal quantities of frozen berries or fruit and vanilla ice cream.

Spread a Free-From-Gluten biscuit with the real fruit ice cream. Sandwich a second cookie on top and you have created a delicious treat.

You can either enjoy the gluten-free ice cream sandwiches immediately or pop them in an airtight container and store in the freezer to enjoy later.

Gluten-Free Ice Cream Sandwich Flavour ideas.

I created 3 gluten free ice cream sandwich combinations.

The first was a Strawberry Real Fruit Ice Cream with Choc Chip Biscuits. I think this flavour combination looked the most picture-perfect, and the Countdown Free-From Gluten Choc Chip Biscuits are large and thin, perfect for an ice cream sandwich. If you wanted to change thing up, I think the Countdown frozen pitted cherries would have also made a lovely ice cream flavour to go alongside the choc chip cookies.

Next up, Blueberry Real Fruit Ice Cream with Lemon Coconut and White Chocolate Biscuits. This flavour combination was absolutely delicious and was definitely my son's favourite. The Countdown Free From Gluten Lemon Coconut and White Chocolate Biscuits are very yummy, a crumbly cookie that's perfect with blueberry ice cream.

Last but not least Mango Real Fruit Ice Cream with Gingernut Biscuits. Now these ones were AMAZEBALLS, the Countdown Free From Gluten Gingernut Biscuits are great, delicious dunked in a cup of tea or filled with mango ice cream! My 2 daughters gave this combination their vote.

Gluten-Free Party Platter

Using my gluten-free ice cream sandwiches and gluten-free products from Countdown I pulled together this gluten-free party platter, it took me no longer than pulling together a regular party platter thanks to some simple swaps.

Plain popcorn is a great inclusive party food for older children, be careful with toddlers as it is a choking risk. The Countdown lightly salted popcorn is gluten-free, and my family gave the Countdown Free From Gluten Cheese Rings a massive thumbs up, my kids love popping their fingers through the rings, making them lots of fun to eat.

I then loaded up the platter with fresh produce )fruits and veggies and some cheese sticks I made from cutting up a larg 1kg block of Countdown Colby Cheese. A few gluten-free jelly beans and the party platter is good to go!

  • 8 Free-From-Gluten Biscuits
  • ¾ C Vanilla ice cream Be sure to check the brand you select is gluten-free.
  • ¾ C frozen berries

Instructions

  • Real Fruit Ice Cream: Making homemade real fruit ice cream is incredibly easy. All you need to do is blitz equal quantities of frozen berries or fruit and vanilla ice cream.
  • Spread a Free-From-Gluten biscuit with the real fruit ice cream. Sandwich a second cookie on top and you have created a delicious treat.
  • Re-freeze the cookies for 30 mins before serving, or serve immediatly but be prepared for them to be a little bit melty!
