Preheat your oven to 180 degrees Celsius or 360 F.
Slice the pears in half then scoop out the core, to do this I used a melon baller.
Arrange them in a shallow baking dish, cut side up.
In a small mixing bowl or jug mix together the remaining ingredients, Mix the lemon juice, vanilla, coconut oil, maple syrup, and ground ginger together.
Pour the seasoning mixture over the pear halves. . Leave the pears to sit for a few minutes.
Flip the pears over so the cut side is down.
Bake at 180 degrees Celsius for 20 minutes, remove from the oven, flip the pears over so the cut side is up and baste them with a little of the liquid from the bottom of the dish, return to the oven and bake for a further 10 minutes or until the pears are caramelised and tender.
Serve with Greek yogurt and a drizzle of honey or maple syrup or your favourite vanilla ice cream.

This recipe is delicious with walnuts or pecans, I add them into the bottom of the baking pan half way through the baking time. This means they bake in the sticky sweet goodness and become candies walnuts!
Baked Pears are delicious served with yogurt or ice cream.
Baking pears will turn even hard unsweet pears into the most delectable dessert.
Sprinkle your baked pears with an apple crumble topping for another way of serving them!
Pears: This recipe will also work with apples. I have made this recipe with many different types of pears including: Packham pear, Anjou pears, Barrett and Beurre Bosc pears.
Honey: This can be substituted for maple syrup, coconut sugar or brown sugar..
Coconut oil: This can be substituted for butter.
Ground ginger: This recipe will work without the ginger, but ginger and pear is such a delicious flavor combination. You could use other spices such as cinnamon or nutmeg instead.

Be sure to cook them until very soft, aim for a finger squashable texture.
If you are cooking this baked pear recipe for a baby under one year of age substitute the honey for maple syrup.
