Mix the crushed garlic, lemon juice and salt together in the bottom of a medium mixing bowl.
Add the avocado flesh to the bowl. Mash and stir with a fork until your desired guacamole texture is achieved and the lemon juice, salt and garlic are mixed through the avocado.
Taste your guacamole and adjust the seasoning if needed.

Choose ripe avocados. One of the best ways to test for ripeness is to gently press the fruit around the stalk, if the fruit has softness/give it is ripe. Haas avocados like the ones I have used in this post skin changes colour when it ripens from green to purple, but this is not the case for all varieties of avocado. Reed avocados for example remain green even when ripe so gently pressing the avocado around the stalk is the best way to check.
My biggest tip is how to easily and safely de-stone an avocado without whacking the pit with a sharp knife. Cut your avocado in half. Then simple press your thumbs into the back of the fruit and the stone will easily pop out. I show how to do this in the recipe video.
If you are making a large amount of guacamole to feed a crowd you can easily double, triple or quadruple this recipe. If you are making large amounts try using your cake mixer instead of a masher to mash the avocado, it works brilliantly.
If you have Mexican Seasoning, try adding a spoonful to your avocado it adds extra flavour!

Ingredient Substitutions
Avocado: When it comes to guacamole you cannot substitute the main ingredient which is avocado. The trick is to choose ripe avocados.
Garlic: This can be substituted for ½ teaspoon garlic powder
Lemon juice: This can be substituted for lime juice, white wine vinegar or apple cider vinegar. If you are using vinegar reduce the amount from 1 Tablespoon to 1-2 teaspoons.
Salt: If you are making this guacamole for a young child or baby led weaning skip the salt. But in general seasoning is crucial when it comes to guacamole.
