3 Ingredient Pizza Dough Pinwheels

Wholemeal 3-ingredient pizza dough pinwheels with a winter-warming cheese and leek filling. Perfect for lunchboxes.

Ingredients

3 Ingredient Pizza Dough

  • 225 grams wholemeal flour 1 ½ cups
  • 3 teaspoons baking powder
  • 200 grams greek yoghurt 1 cup
  • ¼ teaspoon salt (optional)

Leek Filling

  • 1 leek 400 grams
  • 1-2 Tablespoons olive oil
  • 1 cup grated cheese 100 grams

Instructions

Prep

  • Preheat your oven to 180 degrees Celsius (360 F).
  • Discard the dark green leaves from the leek, then thinly slice the white and light green parts.
  • heat oil in pan (medium low) sauté sliced leek for 10 mins, until soft and sweet
  • While the leeks are cooking, you can start on your pinwheel dough.

3 Ingredient Pizza Dough

  • I use a bowl and spoon/whisk to make my pizza dough, but you can also use a stand mixer if you prefer.
  • In a mixing bowl whisk the dry ingredients (wholemeal flour, baking powder and salt)
  • Add the yoghurt, and mix together with a wooden spoon until it comes together as a clump.
  • Turn the dough out onto a lightly floured board or bench, and knead briefly until smooth. If your dough is very sticky add extra flour until it becomes smooth and workable.
  • Roll the dough out into a rectangular shape, you want it to be 0.5 cm to 1 cm thick.

Filling

  • Spread the cooked leeks over the pizza dough.
  • Sprinkle the leeks with the grated cheese.
  • Brush the one-quarter of the dough not covered in toppings with water. This will help the pinwheels hold together once rolled.
  • Starting at the end with the fillings, roll up the dough and fillings into a pinwheel. Try to do this so that they are rolled quite firmly.
  • Slice the log into slices should be 2-3 cm thick.
  • Place the pinwheels on a lined baking tray and bake for 15 minutes until golden brown.
  • Enjoy!

Notes

  • These 3 ingredient pizza dough pinwheels are amazing when they are warm and oozy out of the oven, but they will also store for up to 3 days in an airtight container.
  • Try them as an alternative to sandwiches in a lunch box.
  • If your pizza dough is a little too dry don't be afraid to add a little extra yoghurt.
  • If your dough is a little too wet don't be afraid to add a little extra wholemeal flour.
  • Wholemeal flour: You can absolutely substitute plain flour, if you do you may find you need to adjust the flour/yogurt ratio a little. If too dry, add 1 tablespoon of yogurt until the desired texture is reached. If too wet, add 1 tablespoon of flour until the desired texture is reached.

  • Greek yogurt: I use a thick strained yogurt, if your yogurt is not strained you may find you need a little extra flour to get the right dough consistency.
  • Leek and cheese: you can totally fill these yogurt dough scrolls with other fillings, I give some more ideas in the recipe.
  • Add a creamy layer: A delicious way to take these pinwheels to the next level is to add a layer of sour cream mixed with a little wholegrain mustard before you add the leek and cheese fillings.
  • Blue cheese: To take these wholemeal pinwheels to another level try substituting some of the cheddar cheese for blue cheese, adding a drizzle of honey and a scattering of walnuts.
  • Pizza pinwheels: Try pizza sauce and your favourite pizza toppings to make pizza pinwheels.
  • Sweet: A little cream cheese, fruit and a drizzle of honey will make a lovely sweet pinwheel. Like my wholemeal blueberry scrolls.
  • Vegemite Scrolls: Use a little marmite or vegemite and cheese to make vegemite scrolls.
