- 600 grams diced chicken
- 1 Tablespoon oil
- 1 Cup Sushi rice
- 1 Cup Edamame beans
- Teriyaki sauce
- 2 Cups Coleslaw
- Toasted seaweed
- Sliced vegetables (capsicum, carrot, cucumber)
- 1 Tablespoon Sesame seeds
- kewpie mayonnaise
- pickled ginger
- avocado
Teriyaki Chicken
Heat your oven to 200 degrees Celsius (400 F)
Spread the diced chicken breast on a lind baking tray (with a lip), add the oil and move the chicken around until all the pieces are oiled.
Bake in your hot oven for 15 minutes. (While your chicken and Sushi rice is cooking prepare your salad and condiments.
Remove the chicken from the oven, and stir through the teriyaki sauce until the chicken is well coated.
Salad and Condiments
Vegetables: Slice and or grate your vegetables: Capsicum, Cucumbers, Carrots, Avocado
Toasted Seaweed: (Nori) Tear into pieces
Coleslaw: Make your coleslaw
Edamame beans: Steam your edamame beans as per the instrcutions on the pack
Build your sushi bowl
Start with rice and/or coleslaw in the bottom of your bowl.
Top with your favourite vegetables
Add toasted seaweed pieces
Add the teriyaki chicken
Add your favourite condiments: Japanese mayonnaise, extra teriyaki sauce, pickled ginger, wasabi, sesame seeds, soy sauce

- My best tip is to put all the sushi bowl ingredients on the table and let everyone build their own!
- My kids love this, and yes while they don't add absolutely everything to their bowl that is fine by me.
- Diced Chicken: I've made this recipe with firm tofu and it works great
- Edamame beans: I buy these from the freezer section in the supermarket
- Teriyaki sauce: Use your favourite or you could use my Gluten Free Teriyaki Sauce Recipe
- Coleslaw: I often grab a bagged Japanese slaw when I'm making a sushi bowl.
- Toasted seaweed: Nori sheets or seaweed snack packs are fine
