Preheat your oven to 200 degrees Celsius (400 Fahrenheit)
In a large bowl mix together the self-raising flour, the grated cheese, ham and chives
Add the soda water and cream, and combine gently with a wooden spoon. It should come together into a large bowl.
Tip your ball of scone dough onto a floured surface. Gently work the dough into a sheet thats approximately 3cm thick (just over an inch) you can either cut your into squares with a knife, or use a round cookie cutter for round scones.
Place your scones on a lined baking tray, brush the top of each scone with a little milk and add a little extra grated cheese
Bake for 10-15 minutes until the scones have risen and are golden.
Notes
Be gentle with the dough, scone dough does not need to be kneaded, in fact, it is best if you don't. Once the dough has come together gently shape and cut your scones.
Soda water: I use my soda stream to make soda water for this recipe
Grated cheese: A hard cheddar cheese works best, I usually grate tasty cheese for this recipe.
