Thinly butter both pieces of bread, then flip these over and spread the other side of both pieces of the bread with peanut butter
Use a fork to mash the banana on top of the peanut butter on one piece of the bread.
Sprinkle the mashed banana with the chopped date and cinnamon.
Close the sandwich with the other piece of bread (peanut butter against the banana and butter on the outside).
Toast the sandwich: This can be done in a fry pan on your stove top, in a sandwich press or a waffle maker.

Ripe bananas are key, same as it really is worth trying this sandwich with the addition of chopped dates and cinnamon.
Because this sandwich contains peanut butter it might not be the best to send in a lunchbox as your school may have a nut free policy but it's a great snack for after school and for the school holidays.
If you want to take this sandwich next level you can whisk some eggs and turn it into French Toast. It is one of my kids favourite 'fancy breakfasts' especially if you drizzle it with a little maple syrup or honey.
Bread: Choose your favourite bread, I like to use a sourdough, oat bread or whole wheat bread. My son has coeliac disease and loves this with gluten free bread.
Butter: The butter goes on the outside before you grill the sandwich. You can use a dairy free alternative if this suits you better.
Peanut butter: I'm a smooth peanut butter girl but you can use either smooth or crunchy peanut butter. Almond butter also works well. For a nut free version try sunflower butter.
Banana: The riper the sweeter the grilled peanut butter sandwich will be.
Date: I just use a dried date, but you could use a Medjool date. I find adding the date adds another layer of flavour, it gives adds a hint of almost caramel flavour to the sandwich. You don't have to add the date, but I do reckon it makes this sandwich even better.
Cinnamon and this sandwich combination is a match made in heaven.
