Slice the brie cheese into wedges approximately 1 cm in width.
Using your hands gently spiral the cheese wedges into a circular shape.
Arrange the rosemary springs, wafer crackers, dried fruits, and pears around the central cheese to make a festive Christmas Cheese Board.

Notes
It is easier to cut the cheese into slices to form the wreath when the cheese is firm, so slice the cheese immediately upon removing it from the fridge before it has time to temper and soften.
Be sure to add a pop of red either in the centre of the cheese wreath or sprinkled over it, raspberries, cranberries or pomegranate seeds all work well.
Cheese: To create a wreath-shaped cheese feature in the centre of your Christmas Cheese Board you will need a small wheel of cheese. Camembert or Brie is perfect.
Rosemary: Although you don't eat the rosemary, it will give a festive element to your cheese board so be sure to track down some sprigs of rosemary. Sprigs of thyme will also work.
Fruits and Berries: I like to include a mixture of fresh fruits, dried fruits and berries on a Christmas Cheese Board. I have used: Dates, Cranberries, Grapes, Dried apricots, Casnberries, Blueberries, Pear and Pomegranate seeds on this cheese platter.
Other platter ideas: Nuts, Olives, Cherries, Cherry Tomatoes, Blue Cheese, Cheddar
