Destone your dates, with a sharp knife make a slice lengthwise along the date. You should now be able to pop out the stone, and open out the date.
Fill each date with ½ a Tablespoon of peanut butter. Then close the date around the filling.
Sprinkle with a chopped chocolate and a sprinkle of salt.

Medjool dates: I usually use medjool dates when I stuff dates as they are larger and softer. But you can use dried delgate dates which are often a bit more economical.
Peanut butter: I usually use unsweetened crunchy peanut butter. This recipe works just as well with other nut butters. Almond butter and Cashew Butter are yummy and sunbutter is a great nut-free option.
Dark chocolate: I use dark chocolate as I like its stronger flavor combined with the sweetness of the date, but you can use milk chocolate if you prefer.
Salt: A little salt brings all the flavors together, but could be left out if you prefer or if your peanut butter is already very salty.
Now there aren't many tips to making stuffed dates as the recipe is so simple, but what you can do, is try these other flavor combos some of which are a little more tailored for an adult cheese platter!Stuff with goat cheese, sprinkle with chopped pistachios and drizzle with honey.
Stuff with cream cheese mixed with orange zest and sprinkle with finely chopped thyme and almonds.
Stuff with blue cheese (gorgonzola) and a slice of fresh pear, then drizzle with honey.
Stuff with mashed banana, sprinkle with crispy bacon bits and drizzle with a little maple syrup.
Stuff with sharp cheddar, sprinkle with ground coffee and drizzle with honey.
