Set aside ½ cup of the frozen blueberries.Place the remaining blueberries in a saucepan with the honey and water. Simmer the blueberries until they are soft and pulp.
Mash the blueberries with a fork or potato masher so they release as much juice as possible.
Strain the blueberries through a fine mesh sieve, catching the juice in a bowl or container. Chill the juice.
Drain the lychees, reserving the syrup for later.
Stuff each lychee with one of the blueberries you set aside later to amen eyeballs. Freeze the stuffed lychee eyeballs.
Assemble the punch.
Place the frozen lychees in the bottom of a large jug or punch bowl. Pour over the blueberry juice, the lemon juice, the lychee syrup and the soda water.Taste as you add the soda water until the punch tastes perfect for your palate. Stir to combine.

Taste your purple hocus pocus potion as you add the soda water, add as much or as little until the flavor profile is right for you and your family.
Frozen blueberries: Any frozen or fresh berry will work, obviously the color of the punch will change depending on the berry used. I find the blueberries give a great purple witches brew color.
Honey: This can be substituted for your favorite sweetener including maple syrup, sugar or stevia.
Water: The tap water is needed for cooking the blueberries.
Lychees: I use canned lychees for this recipe
Lemon juice: This punch is nicest with a little lemon juice to cut through the sweetness it also gives brightness to the blueberry flavors, and enhances their colour making them even more vibrantly purple!
Soda water chilled: By soda water I mean sparkling carbonated water. This might be called seltzer or club soda in your part of the world. This could be substituted for lemonade or lemon-lime soda. If you are doing this you will not need to add the honey or sweetener to the berries.
