Preheat your oven to 200 degrees Celsius (400 F) and line a baking tray.
Slice your carrots into batons, reminiscent of french fries (not shoestring fires, a bit chunkier).
In a large bowl (big enough to hold the carrots) add the oil, cornflour, parmesan, paprika and garlic powder, and whisk to combine, it will become a paste.
Add the carrots to the bowl and toss until the carrots are well coated in the seasoning mix. I find this is best to be done with your hands, as you really need to rub the carrots in the paste.
Spread your carrots evenly over the lined tray and bake for 20-25 minutes. You will know the carrots are ready when they are tender and blackened in a few spots.
Sprinkle the carrots with the parsley flakes and additional salt if required.

Notes
Be sure to cook them until they have some blackened spots. You don't want burnt carrot fries, caramelised areas intensify the flavour.
Carrot fries are delicious served with a dipping sauce, homemade mayonnaise, sriracha aioli or a pesto sauce (especially a parsley or coriander-based pesto) are all delicious.
Paprika: This recipe will work with either smoked paprika or sweet paprika, so just use what you have or what you prefer.
Parmesan: I tend to use powdered parmesan as its a bit dryer, but you can definitely finely grate parmesan if you prefer
Parsley flakes: Fresh parsley is also lovely if you have it in season.
Air Fryer Instructions
Prepare and season your carrots as per the instructions above.
Spread your carrot sticks in a single layer in your air fryer basket, air fry at 200 degrees Celsius for 10 minutes. You will know the carrots are ready when they are tender (cooked through, but have some crispy and blackened in a few spots.
Sprinkle the fries with parsley flakes and additional salt if needed
