Set the mix aside for 20 mins, this allows the chia seeds to gel a little and will mean the mix is easier to roll into balls
Take spoonfuls and roll into balls

Ingredient notes and substitutions
Chia Seeds: These can be left out, however, the apricot balls will not hold together quite as well as the gelling tendency of chia seeds is why they are in the recipe.
Rolled oats: I use traditional rolled oats, but quick cook oats will be fine.
Nut butter: My favourite nut butter to use for this recipe are cashew or almond, but these can get a bit pricey, so I often use peanut butter as well, the flavour isn't quite as amazing with peanut butter but still fine.
Maple syrup: This can be substituted for honey
Apricots: If you substitute the dried apricots they won't be apricot balls anymore lol, but other dried fruits are delicious in this recipe especially cranberries.
Tips
Store the apricot balls in an airtight container for up to 7 days, or freeze for up to 3 months,
