Strawberry Overnight Oats

Strawberry overnight oats are the perfect way to enjoy oatmeal in summer, creamy healthy oats with pops of fresh strawberries a great make ahead breakfast.

Ingredients

  • 200 grams plain greek style yoghurt ¾ cup
  • 2 Tablepsoon honey
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 Tablespoon Peanut butter
  • 50 grams rolled oats ½ cup
  • 140 grams strawberries 1 cup diced

Instructions

  • Whisk together the yoghurt, milk, honey, vanilla extract and peanut butter until well combined.
  • Add the rolled oats and diced strawberries to the yoghurt mix, stir until combined.
    Cover and refrigerate for 4 hours refrigerate overnight.
  • Enjoy!

Notes

  • Overnight oats (like the name would suggest) are fantastic made the night before, but once made this recipe will store in your fridge for up to four days.
  • Don't save this recipe just for breakfast, it's equally lovely as a snack or mid-week dessert
  • Plain Greek yogurt: This can be substituted for whipped cottage cheese or a non-dairy alternative like coconut yogurt.
  • Honey: This can be substituted for maple syrup, stevia or a sweetener of your choice.
  • Milk: Cows' milk can be substituted for any non-dairy milk such as almond milk coconut milk or soy milk
  • Vanilla extract
  • Peanut butter: I love adding a nut butter to my overnight but you can leave it out if you prefer or use your favourite nut butter such as almond butter or cashew butter. Sunflower butter is also a nut-free alternative.
  • Rolled oats: You can use either traditional rolled oats or quick-cook oats, steel cut oats will not be suitable.
  • Strawberries: I use fresh strawberries when I make this recipe.
  • Optional: All overnight oat recipes are great with some added chia seeds.
