Mini Egg Cookies

These mini egg cookies are easy to make, look adorable, and are a yummy soft vanilla cookie recipe perfect for celebrating Easter.

Ingredients

  • 100 g butter
  • 100 g icing sugar ½ cup
  • 1 teaspoon vanilla essence
  • 1 egg
  • 300 g flour
  • ½ teaspoon baking powder
  • 1 cup mini eggs

Instructions

  • Preheat your oven to 180 degrees celsius (160 degrees fan-forced).
  • In a medium/large mixing bowl cream the softened butter, icing sugar, vanilla essence and egg.
  • Add the flour and baking powder, combine to form a soft cookie dough, you can either use a beater or wooden spoon for this stage.
  • Use a cookie scoop or large spoon to make golf ball sized portions of dough (you will end up with approximately 12 cookies. Roll into balls and put on a lined baking tray/cookie sheet.
  • Gently flatten the dough balls, I do this by placing a small piece of baking paper on top and gently pressing down on each cookie with a flat bottomed measuring cup, you can use your hand.
  • Make an indent in the centre of each cookie, this will make the cookies like a nest to hold mini eggs. I do this by pressing the round base of an egg into the cetre of each cookie.
  • Add 3 mini eggs into the center of each cookie.
  • Bake for at 180 degrees celsius 6 minutes, you don't want these cookies to be too golden. The cookies will be soft when you remove them from the oven but they will become more firm as they cool.

Notes

  • These easter cookies aren’t hard to make, really my one and only tip is if you are planning on making these with your children, pick your time! Pick a time when they aren't tired or hungry, you aren't rushed or feeling stressed... baking with kids goes much better like this.
  • Another tip.. just decorate them with the kids, still, lot's of fun but with perhaps less pressure especially if your kids are still young.
  • Icing sugar: In some parts of the world this is called confectioners sugar.
  • Egg: This vanilla cookie recipe works well egg-free with 3 Tablespoons of condensed milk as a substitute for the egg
  • Butter: This cookie will work with vegan butter or a full-fat margarine such as Nutalex.
  • Mini eggs: Candy-coated mini eggs are available at Easter time, Cadbury does them and you can also find bags of M and M speckled eggs.
