Ingredients

Pea Pesto Sauce

  • 1.5 cups frozen peas
  • 35 g parmesan cheese
  • cup olive oil
  • ¼ cup sunflower seeds
  • 2 teaspoon lemon juice
  • 1 garlic clove

Pea Pasta

  • 300 grams pasta
  • 1 cup peas

Instructions

Pea Pesto Sauce

  • Cook the first measure of peas as per the packet instruction.
  • Place all the ingredients in a food processor
  • Blitz until smooth
  • If you want a more liquid consistency add a little more oil. Taste and season with salt and pepper.

Pea Pasta

  • Put the pasta onto cook as per the packet instructions. 2 Minutes before the pasta is cooked add the second measure of peas to the pasta pot.
  • Once your pasta is al dente and the peas are tender, drain reserving about ½ a cup of the pasta cooking water.
  • Transfer the drained pasta and peas to a bowl, add the pea pesto sauce and approximately ¼ cup of the pasta water, and toss the pasta so that it is well coated with the pesto sauce. If the pasta is a little dry, add more of the reserved pasta water until the pesto pasta has the consistency you want.
  • Enjoy
