Slice the bananas into even slices, as I was making this as an Easter treat I sliced the bananas on an angle so the slices had an oval/egg shape.
Spread peanut butter on half of the banana slices. Place these slices on a baking paper-lined flat dish, or board/tray that will fit in your freezer.
Top the peanut butter with the remaining banana slices so that you end up with banana peanut butter sandwiches.
Place the chocolate drops and coconut oil in a small microwave-proof bowl. Microwave for 30 seconds. Remove from the microwave and stir, continue with 30-second bursts in the microwave until the chocolate is melted. (You do not want the chocolate to be very runny, you just need it to be smooth)
Use a teaspoon to spoon a small amount of chocolate on top of the banana slices. Optional add sprrinkles
Freeze your chocolate peanut butter bananas for at least an hour before serving.
Enjoy! Chocolate covered peanut butter bananas are best enjoyed almost straight from the freezer, they can sit out for a little while but don't leave them out for a long time.
Notes
Choose ripe bananas, the riper the banana the sweeter they will be.
Don't make the banana slices too thick, very thick frozen banana slices can be too hard to eat, you want them to soften a little when they are out of the freezer.
Store the chocolate peanut butter frozen bananas in an air-tight container in your freezer for up to 3 months.
If you slice your bananas at an angle you will end up with egg-shaped banana slices perfect for Easter
Be creative with your sprinkles and you can use these frozen peanut butter bananas as a lovely treat for any occasion
