Place the strawberries, strawberry puree and cordial in a blend. Pulse until combined (I like the strawberries to have a little bit of texture.
Pour into popsicle moulds and freeze until solid.

Store your pops in their molds in the freezer for up to one month
If you would like an ice block with a creamy texture you can add greek yogurt or your favourite flavored yogurt.
A hack (that I didn't use when making these ice blocks) but does change the texture of the ice blocks and reduces the formation of ice crystals is to add 1-2 teaspoons of corn flour (corn starch) to the mix.
Strawberries: This recipe will work with either fresh strawberries or frozen strawberries. You can also use other berries: raspberries, blueberries, blackberries or boysenberries.
Strawberry puree: I like to add homemade strawberry puree to my popsicles as it adds a richness of flavour and gives the ice blocks a better texture. You could always use strayberry jam as an alternative.
Elderflower cordial: The elderflower cordial adds lovely floral flavors to the popsicle but it is not essential. The elderflower cordial can be substituted for honey, water or you can double the quantity of strawberry puree used.
