How to make a simple satay chicken from scratch that even your children will love. An easy recipe

Ingredients

  • 1 Tbsp oil
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 300 - 500g sliced lean meat or alternative (Chicken, lamb, beef, tofu)
  • 4 Cups sliced vegetables
  • 2 Tbsp sweet chili sauce
  • 3 Tbsp peanut butter
  • 250ml Coconut milk
  • Roasted nuts, fresh coriander leaves and a squeeze of lemon juice as a finishing flourish

Instructions

  1. Heat oil in a fry pan or wok
  2. Add spices, fry for 30 secs-1min until lovely and fragrant
  3. Add sliced meat or alternative, cook until sealed/browned
  4. Add sliced vegetables, stir fry for a few minutes until just beginning to become tender
  5. Add sweet chili sauce, peanut butter and coconut milk
  6. Cook for 5 mins, stirring to ensure the peanut butter melts into the sauce
  7. Add the finishing flourishes if desired
  8. Serve with rice or noodles

Notes

Suitable Vegetables Include: Onion, capsicum, green beans, broccoli, cauliflower, egg plant, mushrooms, carrot (Pretty much anything in your vege drawer or freezer is suitable)

The sweet chili sauce can be omitted if you would prefer the recipe to be low/no sugar, replace with some dried chilli
