Peanut Butter Rice Krispie Bars

To make these Peanut Butter Rice Krispie Bars start with classic rice krispie treats (rice bubble slice), skip the mini marshmallows, add rolled oats and peanut butter to end up with a more nourishing treat.

Ingredients you will need

To make my peanut butter rice krispie bars you will need:

  • Coconut oil
  • Honey 
  • Peanut Butter 
  • Puffed rice cereal: (Rice krispies,  Rice bubbles)
  • Rolled oats
  • Optional: Vanilla extract

Ingredients Notes & Substitutions

  • Coconut oil: This can be substituted for butter, copha or kremelta
  • Honey: This can be substituted for rice bran syrup or maple syrup 
  • Peanut Butter: Be sure to choose a natural peanut butter, whipped peanut butters with stabilising ingredients can be too dry in this recipe and you may need to increase the amount of coconut oil.  Other nut butter such as almond butter, cashew butter or sunflower seed spread can be used as an alternative.
  • Puffed rice cereal: (Rice krispie cereal,  Rice bubbles)
  • Rolled oats: You can use either traditional rolled oats or quick cook oats. If you would like to leave out the oats, you can increase the amount of rice krispies to 3 cups.

Step-by-step instructions

Below are illustrated step-by-step instructions to make my Peanut Butter Rice Krispie Treats, if you prefer just the written instructions then head straight to the printable recipe card below.

Prep: Line a baking dish with baking paper or parchment paper. I use a 7 x 9-inch pan (18 x 22 cm)

Step one: In a large pot melt the honey and coconut oil, bring to the boil so that it begins to caramelise and thicken a little.

(This step can be completed using a microwave and a microwave-safe bowl)

Step two: Turn off the heat. Add the peanut butter and vanilla extract (if using) and stir it into this mixture, this will not take long, you just want the peanut butter to melt into the honey mix, If you overcook the peanut butter you will end up with a crumbly slice

Step three: Add the puffed rice cereal and oats. Mix to combine.

Step four: Press the crispy rice cereal in an even layer into your prepared pan. Refrigerate for 4hrs or overnight.

Step five: Slice, I usually slice into 12, these are quite large portions, you could go smaller depending on your kid's age and appetite

Here is how you can make these rice krispie treats perfectly every time!

  • I store this peanut butter rice bubble slice in an airtight container in the refrigerator. The bars can become a little soft and crumbly at warm room temperature or in humid conditions which is why I keep them in the fridge.
  • These bars will store in the fridge for up to 2 weeks.
  • This recipe also freezes well, I often freeze it and then pop it into snack boxes for my kids, it defrosts and is perfect for eating.

Ingredients

  • 50 grams coconut oil
  • 65 grams Honey ¼ cup
  • 120 grams Peanut Butter half cup
  • 1 teaspoon vanilla extract optional
  • 2 Cups puffed rice cereal rice bubbles
  • 1 Cup Oats

  1. Congratulations on your second Fortnightly Fork email! Like all new things they take a little time to get into the swing (especially with many little ones under your feet) but you'll get there. I look forward to reading them.

    A question on this recipe, "the 1 Cup oats" since there are many types of oats I want to double check which ones your recipe uses.....are they whole rolled oats (as in the old fashioned oats you make porridge out of), or is it instant oats (which is a much smaller flake), or are you talking about oat bran/flour? I look forward to making this recipe.

    Oh, one last thing, thanks for advising your readers the diff in tablespoon sizes etc. as I live in Canada.
