Simple Chocolate Weetbix Slice No Bake Recipe

This Weetbix slice is one of the most popular on my site, its a super easy recipe that requires no baking!

Ingredients you will need

Weetbix forms the base of this no-bake slice. Weetbix is a very common iron-fortified cereal in both New Zealand and Australia. Weetbix is also sold as generic "wheat biscuits". In the UK, Weetabix is a very similar cereal.

To the Weetbix I add dried fruit (dates or raisins), Nuts or Seeds (Sunflower seeds, almonds, cashews or macadamia nuts) Coconut, Cocoa and Honey.

You can top the slice with a little melted dark chocolate, but this is optional.

Ingredient Notes and Substitutions

  • Weetbix: This can be substituted for generic brand cereal ie Wheat Biscuits
  • Sunflower seeds: These can be substituted for any nuts or seeds. (cashews, macadamia, pumpkin seed, almonds
  • Dates: These can be substitutes for raisins or sultanas. Dried apricots are an option but give the slice quite a different look and flavour profile. I typically use regular dates but you can use Medjool dates which are softer.
  • Desiccated coconut: This can be left out entirely, just increase the seeds or nuts by half a cup.
  • Honey: This can be substituted for rice malt syrup. I have also used maple syrup but the slice was a little stickier with the maple syrup.

How to Make Chocolate Weetbix Slice

Step one: Place all the ingredients (excluding the dark chocolate) in a food processor

Weetbix, cocoa, sunflower seeds, coconut and raisins in a food processor.

Step two: Blitz until comes together into a ball, this takes 3-5 mins. If the recipe is not coming together add 1-2 Tablespoons of water. I find the water is not needed every time, I think it depends on how dry the dried fruit you are using.

Step three: While the food processor is doing its magic, line a loaf tin with baking paper

Step four: If you have chosen to use dark chocolate on the top, you can also get this melted. I either use a double boiler, or for a small quantity like this I do short 30 second bursts in the microwave on 50% power)

Step five: Press the mixture into the loaf tin.

Step seven: Refrigerate for 2 hrs

Top Tips

Here is how you can make this recipe perfectly every time!

  • Be patient: This mixture can take what seems like quite a bit of blitzing to come together.
  • If after 3-5 minutes of food processing the mix is still not coming together add 1-2 Tablespoons of water.
  • If your food processor struggles with the dates, try soaking them in warm water first. Or pop them in a microwave-proof bowl, add a splash of water, cover then microwave for a couple of minutes.
  • I tend to just use regular dried dates as they are so much cheaper. but you can use Medjool dates, they are softer and easier on food processors.
  • You can also roll this mix into bliss balls instead of pressing the mix into a slice tin.

FAQs

Can I freeze Weetbix Slice?

You sure can, this no-bake Weetbix slice will store in the fridge for 3-5 days, but it does freeze well for up to 3 months. I find adding it to the kids lunchbox frozen is brilliant. By the time they come to eat it at school it has defrosted. 

What is Weetbix?

Weetbix is an iron-fortified wholegrain wheat cereal common in New Zealand and Australia.

Are Weetabix and Weetbix the same?

Weetbix and Weetabix are very similar iron fortified wholewheat cereals. Weetbix is made by Sanitarium and sold in Australia and New Zealand. Weetabix is sold in the UK.

What is an American alternative to Weetbix?

There is not a direct equivalent to Weetbix in the USA. Some specialty stores however will stock UK Weetabix or Australian Weetbix. The most similar American breakfast cereals are Shredded wheat, Unsweetened Wheaties, and Wheatie Flakes.

Is Weetbix slice healthy?

This is a little bit of a tricky question as people have such different definitions of healthy.

The base of this slice is Weetbix. In New Zealand, we say Kiwi Kids are Weetbix kids, as it is such a very very popular breakfast cereal here in New Zealand.

The funny thing is I believe the Australians say Aussie Kids are Weetbix Kids, so it’s clearly a very common breakfast cereal in the Southern Hemisphere.

Weetbix is low in salt, low in sugar and high in fibre. This ticks a lot of nutrition boxes for me. The other 5 ingredients in this chocolate slice are coconut, cocoa, dates, sunflower seeds and honey. So for me, yes I do consider this a healthy slice recipe. 

Weetbix is also fortified with iron, the cocoa, dates, and Weetbix in this recipe means it is also a relatively high source of plant-based iron for kids. 

In saying all this though, obviously, Weetbix is a processed breakfast cereal so this slice is not perfect or non-processed, but for me, it is A-OK.

A Thermomix Version?

I have had a few people ask me if there are Thermomix instructions for this recipe. I do not own a Thermomix, so, therefore, have not made this slice recipe specifically to be made in a Thermomix. But I have been told by my followers that it works fine in a Thermomix. It’s a no-bake chocolate slice so you only need the blender/food processor function of the Thermomix

Equipment

Ingredients

  • 5 Weetbix 75g (Weetabix or Wheat Biscuits)
  • 1 Cup Dates pitted
  • ½ Cup sunflower seeds
  • ½ Cup desiccated coconut
  • 4 tablespoon Cocoa
  • 2 tablespoon Honey
  • 2 tablespoon Water
  • 40 g dark chocolate optional

Instructions

  • Place first 7 ingredients in a food processor
  • Blitz until comes together into a ball (takes 3-5 mins). If The mix is not coming together add 1-2 Tablespoons of water
  • While food processor is doing its magic line a loaf tin with baking paper

For dairy-free ensure the chocolate used is dark chocolate that is dairy-free or skip the chocolate layer on top. For wheat and gluten-free the new gluten-free Weetbix work well in this recipe
